Hey! What's cookin'?


Hello Ladies,

 

As someone who is not renowned for my prowess in the kitchen, I thoroughly enjoyed the cookery demonstration given by Barbara from the Emsworth Cookery School last Thursday. I appreciate that it was difficult to see what she was doing at times, due to the fact that she was on a raised stage but I hope that you managed to follow the gist of what was going on and were able to sample some of her delicious canapes. Thanks to Sharon for posting photographs and the recipes used on our Facebook site. I’m told that Barbara’s demonstrations work far better in small groups, so here is her website, where you can find details of courses that are taking place in the new year for anyone who may be interested:

RECIPES

 

As promised here is the second recipe from Edna Blake for her scrumptious “Dublin Tea Cake” 

  

DUBLIN TEA CAKE

 

This recipe is sufficient for 2 x 2lb loaf tins so if you only want to make one cake obviously just halve the recipe.  My suggestion is to make two if you have two 2lb loaf tins, and freeze one until you need it. 

 

Ingredients:

Half pint strong cold tea

16 ozs dried mixed fruit

  8 ozs Demerara Sugar

  4 ozs Glacée cherries, quartered

16 ozs self-raising flour

  1 large egg, beaten with 2 tablespoons milk

 

Method:

In a mixing bowl, soak the fruit and sugar in the cold tea overnight.

The following day, stir in all the remaining ingredients until well mixed and combined, then spread into two well-greased loaf tins (2 x 2lb loaf tins). (Alternatively, line tins with parchment cake papers.)

 

Luckily, I have two identical tins, so am able to weigh the tins before cooking, making sure there is the same amount of cake mix in both tins.

 

Bake in preheated oven, middle shelf, Gas mark 3, or 170°C or 150°C Fan for 1 hour, or until cake tester pushed into centre comes away clean. Always check carefully after about 55 mins, adding 5 mins at a time until satisfied properly cooked. Leave in tin until cool enough to handle then turn out onto wire rack to finish cooling.

 

Serve half inch thick slices and spread with butter if required.

In response to Aileen’s request for favourite cake recipes...

If any ladies are stuck for ideas to use up left-over mincemeat after making a batch of mince pies, this recipe might help!  It's one of our favourites any time of year and is comparatively quick and easy to make.


 

Belgian (Mincemeat) Cake

 

This recipe is taken from Cranks Recipe Book.  From the list of ingredients, you’d think this cake would be very dense and heavy. 

In fact, it’s surprisingly light, delicately flavoured and fragranced with spicy mincemeat.  It’s a lovely cake to enjoy at any time of year. However, as we don’t like marzipan or icing, it also makes a lighter alternative to Christmas cake.

 

100g baking margarine

75g dark brown sugar

2 large eggs

150g wholemeal self-raising flour

225g mincemeat

1 tablespoon water

 

1.     Grease a 20cm baking tin (square if you have it) and line the bottom with greaseproof paper. Preheat the oven to Gas 4 / 180C.

2.     Cream the softened margarine and sugar together until light and fluffy.  Beat in the eggs a little at a time. Fold in the flour.

3.     Mix in the mincemeat and stir in 1 tablespoon water.

4.     Spoon the mixture into the cake tin and bake in the centre of the oven for about 30 minutes, until the cake is well-risen and golden and a skewer inserted into the cake comes out clean. 

5.     Carefully turn out of the tin onto a wire cooling tray and remove the greaseproof paper.  Leave until cold and store in an airtight tin.

 

This cake keeps well for around 1 week.  Approx 12 servings.

Due to the clocks going back soon, Lynda would like to move the Prom Plodding time to Wednesdays at 10.30am, with immediate effect. Meet in the usual place opposite the Waverley for a casual stroll along the Prom and maybe a sneaky coffee afterwards. All welcome.

My Sisters’ House Christmas Present Appeal

 

Once again, we will be supporting the My Sisters’ House Christmas Present Appeal. We have done this for a

few years now and our contributions are always very gratefully received. If you’d like to contribute, please wrap a gift for either a lady or a child and label accordingly (lady, baby, girl aged ?, boy aged ?).

We will be collecting gifts at our next meeting in November

 

Remember that the clocks go back next Sunday, 27th October.
